HD-Kohlenstoffstahl (auch als hochkohlenstoffhaltiger Stahl oder Kohlenstoffstahl bezeichnet) ist deutlich stärker und härter als nicht rostender Stahl (rostfreier Stahl), da er mehr Kohlenstoff enthält.

Für den Einsatz im Garten ist wichtig, dass Erzeugnisse aus Kohlenstoffstahl anders auf Feuchtigkeit reagieren als Erzeugnisse aus nicht rostendem Stahl. Nicht rostender Stahl kann durch den Zusatz von Chrom sehr gut mit Feuchtigkeit umgehen und ist 100 % rostfrei. Kohlenstoffstahl enthält keinen Chromzusatz, rostet aber dennoch nicht so schnell. Das liegt an einer Schutzschicht, die als Reaktion mit Feuchtigkeit entsteht (Patina), vergleichbar mit der Schicht, die man manchmal auf Kupfer sieht. Kohlenstoffstahl ist also nicht rostfrei, aber rostbeständig.
