Der Vauden Swiss Cheese has all the creaminess and nuttiness you have come to expect from a central Pennsylvania, Amish made Swiss cheese. This all-natural, hand-made cheese of the Emmental type is made from raw cow milk. The flavor of this farm stead cheese is intensely Swiss with just a hint of acidity, nuts and butter, but beautifully balanced. The texture is smooth and slightly soft with numerous small holes. The firm natural rind is produced by aging exclusively in our cave. In addition,we age the 12 lb. wheels, continually turning and rinsing them in salt water. Der Vauden Swiss is named for a town in Switzerland, Vaud, from which our ancestors emigrated, and from which we got our original Swiss cheese recipe.

Der Vauden Swiss is the perfect sandwich cheese, especially with ham and spicy mustard, as well as a classic Rueben. It goes great on burgers, in red-wine fondues and with chef salads. This cheese is well complemented by Rebecca’s Strawberry Cranberry Preserve as well as Aunt Ruth’s Strawberry Rhubarb Conserve and of course apples, pears, grapes and quince. It pairs well with fruity white wines and medium to full bodied fruity reds.

Presentation → 4 oz block, 7 oz block, and 5 lb loaf; vacuum sealed

The milk for this cheese is produced on the Esh family farm located in the Nittany Valley of central Pennsylvania.  The Eshes are proud of both their farmstead and the care that they give each individual animal. A large emphasis is put on cow comfort and providing a natural environment for the cows.
