We source single origin speciality coffees at grade 85 or above and roast each at a medium profile to get the best aromatics and flavors. La Joya is a steep micro farm nested high on the slopes of Acatenango Volcano. Reaching 1890m in elevation, it overlooks the City of Antigua. It was created 15 years ago, which is rather young compared with the other ‘certified Antigua’ farms. We’ve sourced a real nano-lot named ‘bajo las estrellas’, meaning under the stars. Only the coffee over 1800m would be harvested for Roasting Plant.
