Hij besloot dat hij dit wilde veranderen. Eerst herbouwde Marco de oude kelder van zijn familie op de boerderij van zijn moeder in de Samperi-cons. Daarna zocht hij overal naar oude Grillo solera-vaten van de plaatselijke contadini.

Lekker bij: Alles uit de zee. 

Leuk weetje: Grillo is een witte druif uit Sicilië waarvan DNA-onderzoek in 2008 heeft uitgewezen dat ze afkomstig is uit een kruising van catarratto en moscato d’Alessandria (ook wel zibibbo genoemd). Grillo was lange tijd de sterkhouder achter de populaire versterkte wijn Marsala.
