De alcoholische vergisting vindt temperatuur gecontroleerd plaats in RVS. Ook vindt er een malolactische omzetting plaats. Vervolgens rijpt de wijn 6 maandenop de fijne lie. De primaire wijnaroma's zijn mooi behouden, de wijn is verfijnd en mineralig zoals je van een Chablis mag verwachten.
