Het verhaal van La Chablisienne begint in 1923, toen enkele wijnbouwers hun krachten bundelden om de economische moeilijkheden van die tijd het hoofd te bieden en een coöperatieve kelder creëerden in het hart van de wijngaard van Chablis, in Bourgondië. Tot halverwege de jaren vijftig leverden de leden hun productie aan La Chablisienne, die toen de blends verzorgde en voornamelijk aan de groothandel verkocht. Vervolgens besloot La Chablisienne de oogsten binnen te halen in de vorm van most, een kenmerk dat het kenmerk van het huis zou zijn en een totale beheersing van de vinificatie mogelijk zou maken. Met als resultaat hoge kwaliteitswijnen die nationaal en internationaal erg geliefd zijn. De wijnstokken staan aangeplant op een bodem van Kimmeridgien en klei-kalksteen. De stokken zijn gemiddeld 25 jaar oud en staan in een premier cru wijngaard op de rechteroever van het riviertje Serein in de gemeente Chablis en Fleys. De druiven worden zorgvuldig geoogst, waarbij de kwaliteit voorop staat. De fermentatie en de malolactische vergisting vinden plaats in zowel roestvrijstalen tanks als in eikenhouten vaten. Hierna verblijft de wijn nog een jaar op de fijne gistsporen voor meer complexiteit. Een schoolvoorbeeld van klassieke, hoogwaardige Chablis. Het is een volle witte wijn met een lichte goudgele kleur. De geur is bloemig, mineraal maar bovenal fris. Hij heeft een mooie, ruime en fijn minerale smaak met tonen van rijp geel fruit. Ontzettend fris en met een lange afdronk. I haven’t decided if I really like Matcha, as I got this, just to find that out. I find that the packaging is interesting, and it is best, probably, to store it in the package it comes in.
